  1. Thinly slice your eggplant length wise
  2. Toss and coat the sliced eggplant in olive oil
  3. Following the directions of your air fryer, add the eggplant slices but try not to overlap
  4. While the eggplant is in the air fryer, diagonally slice your baguette on the bias and gently toast
  5. Once the bread is toasted, drizzle with olive oil and spread with the goat cheese
  6. Once crisp on the edges and caramelized on the flesh, remove from air fryer and add to the top of toasted bias sliced baguette slices
  7. Garnish with salt, pepper, chili flakes, and fresh parsley
